Executive Chef Jordan Walsh

Jordan’s Walsh culinary carrier began at a young age. Working as a line cook during high school Jordan realized that the culinary arts were his life’s passion. Beginning his cooking apprenticeship even prior to graduation, Jordan quickly established a reputation as a hard worker and was recruited by the Fairmont Chateau Whistler.

Over the next decade Jordan worked along the West Coast, refining his skills, cooking with fresh seafood and learning about sustainability within the hospitality industry. Working at the Oswego Boutique Hotel in Victoria especially left an impression on Jordan. Focusing on customizing the culinary experience for each guest served and each event hosted, required a dedication to creativity.

In 2012 Jordan began working as the Banquet Chef at the Hyatt Calgary. Working large events created a new challenge for Jordan, building a team to deliver his beautifully crafted concepts in large scale. One of Jordan’s most memorable events was catering the David Foster Foundation Gala, which at the time was the highest grossing gala fundraiser in Canada’s history.

Jordan finished his time with the Hyatt as the acting Executive Chef at Catch and the Oyster Bar. Using the skills honed on the west coast Jordan won the 2016 Clam Chowder Chow Down for Catch and the Oyster Bar.

In 2017 Jordan celebrated the birth of his first child, Margaret. Desiring a balance in his culinary pursuits and his family life, Jordan decided to focus his talents towards the up and coming brunch scene in Calgary. The menu at Brekkie was created with the intent of showcasing premium ingredients. Jordan created easily recognizable, traditional dishes, that are set apart by the quality of the ingredients.
